Turkish Tas Kebab & Vegetable Bulgur Pilav Iftar Menu / Ramadan Mubarak!

In Turkey, we have many kebab recipes besides sis kebab. Tas Kebab is one of them. It has meat chunks, can be from a lamb of beef and potato cubes. A traditional dish in Turkish restaurants and homes. It is usually served with rice pilav but bulgur pilav also can be used. This time I made my bulgur pilav with lots of veggies and meat stock to make it more flavorful and nutritious.
Ingredients for Tas Kebab:
500 grams beef or lamb, cut in cubes
1 onion
2 tbsp olive oil
2-3 sweet green peppers
3 medium-size potatoes
1 tbsp tomato paste
1-2 tomatoes preferable when in season
salt, pepper
hot water or meat stock from precooked meat we are going to make

Ingredients For Vegetable Bulgur Pilav:
2 tbsp olive oil
1 eggplant
1 carrot
1-2 medium onions
4-5 tbsp olive oil
2-3 green peppers
1 sweet red pepper
2-3 close of garlic
3 medium-size ripen tomatoes
salt, black pepper, sweet red pepper
2 cups coarse bulgur wheat
1 cup meat stock (if you have)
2+1/2 cups or more water (if you don't add meat stock add more water of course)
