Ingredients
* 1 cup Parmesan Cheese (grated)
* 4 clovesGarlic
* 1 cupWalnuts (chopped)
* tspThyme (dried)
* 2 3 lbsButternut Squash
* 4 tbspButter
* 1 2 slicesBread (salted rosemary, garlic)
* tspRosemary (dried)
* - 1 tspFresh Ground Black Pepper
* - 1 tspPink Himalayan Salt
* Vito & Joes Extra Virgin Olive Oil

How to Prepare
1. Preheat the oven to 400F.
2. Prepare butternut squash: peel, remove seeds, and cut into 1-inch cubes.
3. Toss squash cubes with olive oil, herbs, and garlic.
4. Add of chopped walnuts and spread mixture on a lined cookie sheet.
5. Roast in the oven for 20 minutes.
6. Drizzle with excess oil from the parchment paper.
7. Reduce the oven temperature to 325F.
8. Add butter, grated parmesan, and torn bread pieces to the roasted squash. Stir.
9. Transfer to a serving dish and top with remaining walnuts and more parmesan.
10. Bake for 15-20 minutes.
