Ingredients

Water as required
Pinch of Turmeric
1/2 cup Toor Dal
2 tbsp Coconut Oil
1/2 Fenugreek Seeds
3 tsp Urad Dal
1 1/2 tsp Coriander Seeds
1 tsp Cumin Seeds
8 - 10 Dried Chillies
1/3 cup Coconut
1 tsp Mustard Seed
2 Green Chillies
6 - 8 Spring Curry Leaves
2 Cup Mixed Vegetable ( Eggplant, Drum Stick, Pumpkin, Ashgaurd )
Asafoetida dissolved in water
Tamarind Water
Salt to taste
2 tbsp Jaggery

Method:

1. Take a pressure cooker and add water as required.
2. Put some turmeric powder and half a cup of toor dal.
3. Cover and cook till the dal gets done, till the time 4 whistles are done.
4. To make a paste, take a pan, add oil, fenugreek seeds and urad dal. Cook for some time.
5. Add coriander seeds and stir it around.
6. Put some cumin seeds, few dried red chillies and cook this till the colour starts to change.
7. Add grated coconut to the pan and stir it together.
8. Put it all in a mixer jar, let it cool, pour in some water and blend it all into a paste.
9. Till this time check on the dal and if it's cooked take it out in a bowl.
10. Now take a kadhai and add coconut oil, mustard seeds, urad dal, green chillies (slit) and curry leaves.
11. Next add a set of mixed vegetables that are cube in shape along with hing dissolved in water, some normal water as required and tamarind water.
12. Put some salt to taste and stir it all with a spoon.
13. Cook on a medium flame for about 5 minutes.
14. Now add the paste made into the pan along with crushed jaggery.
15. Stir and mix. Let it cook for 5 minutes on a low flame.
16. Add the cooked dal along with salt to taste and water as required.
17. Simmer this for about 5 minutes on a low flame.
18. Switch off the gas, stir and take it out in a bowl. Serve with rice, dosa, idlis and with much more.
