Ingredients
--------------------
Red raw rice - 500gm
Jaggery - 350-400gm
Red beaten rice - 1/4cup
Palayamkodan banana -2
Cardomom - 4-5
Dry ginger powder-2tsp
Black sesame seeds-2tbs
Coconut bits - 1/2cup
Ghee - 1/2cup
Coconut oil-1/2cup

We can make around 50 unniyappam with this quantity

Method
--------------
Wash and soak the red raw rice for 4-5hrs
Wash and soak the beaten rice for 30 min
Melt the jaggery with 1/2cup water and strain it and keep it aside
Fry the coconut bits in 2tpsp of ghee till light golden and add the sesame seeds also and fry for one more min and keep it aside
Grind the rice using the melted Jaggery and Cardomom pods
*Do not grind it to very smooth paste
In a bowl mix the beaten rice and banana using hand
Now add the batter to it and add the dry ginger powder and mix well
Add the fried coconut bits and sesame seeds to it and mix well and keep it in a warm place for 8-10hrs for fermentation
*If you can't wait for 8hrs add 2pinch of soda bicarbonate and preparet the unniyappam*
Heat the unniyappam mould and add 1/2 of ghee and coconut oil
*Fill oil 3/4 of the pit *
Heat the oil in high flame first and reduce the flame to medium while pouring the batter
Turn the unniyappam to the other side once it has turned to light golden , do not wait till brown colour
Remove from the pan and sprinkle little sugar over it and now the super soft and tasty unniyappam is ready to be served..
