Khichdi prepared with urad dal is going to provide you all the essential nutrients and the next-level comfort that you were craving for!URAD DAL KHICHDIIngredients½ cup split black green gram with skin (chilkewali urad dal), soaked for 2 hours and drained5 tbsps ghee + to drizzle1 tbsp cumin seeds2 tsps chopped ginger1 green chilli, chopped½ tsp asafoetida (hing)½ cup rice, soaked for 15 minutes and drainedA pinch of turmeric powderSalt to tasteMethod1. Heat 3 tbsps ghee in a pressure cooker. Add cumin seeds and once they start to change the colour, add ginger, green chilli, asafoetida and sauté for 1 minute.2. Add rice, urad dal, turmeric powder, salt and mix well.3. Add 3½ cups water and mix well. Cover with the lid and cook on medium heat till 4-5 whistles are released.4. Open the lid once the pressure settles completely. Mix well. Add remaining ghee, ¼ cup water and mix well. Cook for 2-3 minutes more.5.
