Potato Vadas with spicy white peas gravy served alongside bread and onions is a wholesome snack for all. VADA USSALIngredients4 ready-made potato vadas2 cups dried white peas (safedvatana), cooked3 tbsps oil1 tsp mustard seedsA pinch of asafoetida8-10 curry leaves2 medium onions, chopped1 tbsp ginger-garlic paste1 small tomato, chopped½ tsp turmeric powder1 tbsp red chilli powder1 tbsp coriander powder1 tbsp goda masala powderSalt to taste2 tbsps freshly chopped coriander leaves + for garnishWhite bread slices to serveChopped onion to serveLemon wedges to serveMethod1. Heat oil in a non-stick pan, add mustard seeds, asafoetida and let the seeds splutter. Add curry leaves and onion, sauté well till light brown. 2. Add ginger-garlic paste, sauté for 1-2 minutes. Add tomato and sauté well. Cover and cook till pulpy. 3. Add turmeric powder, red chilli powder, coriander powder,goda masala powder and mix well. Cook for 1 minute.4. Add white peas, salt and 3 cups of water, mix well. Add chopped coriander and mix well. Let the mixture come to a boil. Take it off the heat.5. Place a portion of vadas on a serving plate, pour over the prepared usal on it, top it.
