Vanilla Chai Creme Brulee | Sanjeev Kapoor Khazana

Watch this video and make this delicious crème brulee infused with the flavour of tea.

VANILLA CHAI CRÈME BRULEE - (Serves - 4)

Ingredients

1 vanilla pod
3 tea bags
2 cups fresh cream
5 egg yolks
½ cup castor sugar
Brown sugar as required

Method

1. Preheat oven to 180° C.
2. Heat cream in a small deep non-stick pan.
3. Scrape out vanilla extract, add to pan alongwith the pod, whisk and bring mixture to boil.
4. Dip in tea bags, whisk and cook till mixture thickens.
5. Combine egg yolks and castor sugar in a bowl and whisk well till sugar melts. Strain in the vanilla-cream mixture gradually and whisk well.
6. Place individual ramekin moulds on a baking tray and fill them with prepared cream mixture. Pour some water into the baking tray and cover the moulds with aluminium foil.
7. Put the baking tray in preheated oven and bake for 20-25 minutes. Remove from heat and cool. Refrigerate for 1 hour.
8. Put a layer of brown sugar on top and brulee using a blow torch.
9. Serve immediately.
