Vanilla Flan | Sanjeev Kapoor Khazana

This Spanish style custard with a simple vanilla flavour is proof that the best things in life are simple.

VANILLA FLAN - (Serves - 4)

Ingredients

1 vanilla pod
6 tablespoons cornstarch
1 cup fresh cream
4 egg yolks
1 egg
3 cups milk
1 cup castor sugar
1 large half baked pie shell

Method

1. Preheat oven to 180° C.
2. Combine cornstarch and cream in a bowl and whisk well. Add egg yolks and whisk. Break an egg and whisk well.
3. Heat milk in a small deep non-stick pan. Add castor sugar and vanilla extract alongwith the pod. Remove from heat, discard the pod and cool.
4. Add cornstarch-egg mixture to milk mixture and whisk continuously.
5. Place the pan back on heat, whisk continuously and cook till mixture thickens. Transfer in another bowl, cover with cling film and refrigerate to chill.
6. Place the half baked pie on a baking tray and pour the prepared vanilla mixture into the pie.
7. Put the baking tray in preheated oven and bake for 40-45 minutes. Remove from oven, cool and demould.
8. Cut into wedges and serve.
