Varagu Kanji Recipe in Tamil | Kodo Millet Porridge | வரகு கஞ்சி | Varagu Arisi Kanji

Procedure:

Step 1: Pressure cook the following ingredients for 4 whistles in medium flame.

3/4 cup varagu / kodo millet (approx. 1/4 cup per person)
0.75 cup * 4 times water
0.75 tsp salt
0.25 tsp cumin seeds
2 cloves of garlic

Step 2: Stovetop cooking:
Add 1.5 cup water & 0.75 tsp salt and boil for 5 to 7 mins, stirring occasionally on medium flame.

Step 3: Saute the seasonings given below in 2 tsp of ghee or oil, in a separate pan and add to main dish. Stir well and serve hot.

0.25 tsp cumin seeds
3 pearl onions (finely diced)
3 green chillies
4 to 5 curry leaves
1 pinch asafoetida

Note: If you would like to add vegetables to this porridge, you can add 2 tbsp of shredded carrot while pressure cooking.
