Veg Chowmein | Sanjeev Kapoor Khazana

This is the popular Indian-Chinese noodles stir fry dish which has a mix veggies and some fun sauces. Go ahead if you are looking for something savory yet delicious

VEG CHOWMEIN

Ingredients

2 cups boiled noodles
2-3 spring onion bulbs, sliced
5-6 button mushrooms, cut into quarters
3-4 babycorn, diagonally sliced and blanched
¼ cup mixed capsicum diamonds (red, green and yellow)
1 medium onion, sliced
1 tablespoon sesame oil
4-5 garlic cloves, sliced
1 inch ginger, finely chopped
Salt to taste
1 teaspoon soy sauce
1 tablespoon red chilli sauce
1 teaspoon vinegar
1 teaspoon toasted white sesame seeds + for garnishing
Diagonally sliced spring onion greens for garnishing

Method

1. Heat sesame oil in a non-stick pan. Add garlic, ginger and spring onion bulbs and sauté for 1 minute.
2. Add mushrooms and babycorn and sauté for 1 minute. Add salt and mix. Add mixed capsicums diamonds and onion and sauté for 1 minute.
3. Add noodles, soy sauce, chilli sauce and salt, mix and cook for 2 minutes. Add vinegar and 1 teaspoon sesame seeds and mix well.
4. Serve hot garnished with spring onion greens and sesame seeds
