INGREDIENTS
1. Basmathi Rice - 2 Cups
2. Curd - 1 Cup
3. Mint Leaves - 1 Cup
4. Coriander Leaves - 1 Cup
5. Fried Onions - 1 Cup
6. Vegetables
7. Green Chillies - 2-3
8. Paneer - 1/2 Cup
9. Fried Cashew nuts
10. Chilli Powder - 2 Teaspoons
11. Salt - 2 Teaspoons
12. Cumin Seeds Powder - 1 Teaspoon
13. Coriander Seeds Powder - 2 Teaspoons
14. Garam Masala - 1/2 Teaspoon
15. Bay Leaves - 2
16. Shahjeera - 1/2 Teaspoon
17. Cinnamon - 2-3 Small Sticks
18. Cardamom - 4
19. Cloves - 6
20. Clarified Butter (Ghee) - 3-4 Tablespoons
21. Turmeric Powder - 1/2 Teaspoon
22. Ginger Garlic Paste - 1 Teaspoon

Let's see how to cook vegetable dum biryani. Dice onions and fry till they turn brown. Cut vegetables into bigger sized pieces. Here I used capsicum, potato, green peas, cauliflower, beans and carrot. Wash and soak basmathi rice for 1/2 hour. Vegetables need to be marinated first. To a bowl, add 1 cup curd. Add 2 teaspoons chilli powder, 2 teaspoons coriander seeds powder, 1 teaspoon cumin seeds powder, 1/2 teaspoon garam masala powder, 1 1/2 teaspoon salt and mix. Add diced vegetables and mix. Add 1/2 cup coriander leaves, 1/2 cup mint leaves, half of fried onions and mix. Add shallow fried paneer pieces and mix. Paneer could be fried or used as it is. Add fried cashew nuts, 2 tablespoons oil and mix. Add 1/2 teaspoon turmeric powder, 1 teaspoon ginger garlic paste and mix. Close lid and marinate for 15-20 minutes. Prepare rice in the meantime. Fill a pan more than half with water. Add 1/2 teaspoon salt, 1 teaspoon oil, whole garam masala- 2 bay leaves, 6 cloves, 4 cardamoms, 2-3 small cinnamon sticks, 1/2 teaspoon shahjeera, close the lid and boil the water. Add soaked basmathi rice and close the lid. Let the rice cook only up to 70 percent. Move the rice to a strainer. Take a pan with thick base. Add 2 tablespoons clarified butter (ghee) and spread it. Mix marinated vegetables and spread it evenly on the base. Add 1/2 cup water to the bowl and add this to the vegetables. Layer the boiled rice. If the quantity is more, vegetables and rice could be layed consecutively in multiple layers. Add rest of the mint leaves, coriander leaves, fried onions and spread it evenly. Add 2 tablespoons clarified butter (ghee) and put the pan on stove. Put a heavy lid on so that the water vapour doesnít escape. Close off holes of any using wheat dough. If the lid isn't heavy enough, put a weight on the lid. Cook for 10 minutes on high flame. Place a flat pan under the biryani pan and Cook for 10 minutes on high flame. Cook for 15 minutes on low flame. Cut off the stove and pen the lid after 10 minutes. Serve with raitha or gravy.
