Ingredients for Veg Fried Rice Recipe

2 cups Cooked rice
3 tablespoon oil
1 tbsp Garlic finely chopped
4 Green chilies chopped finely or slit
⅓ 1 medium sliced Onion
10-12 or ½ cup Green beans (French beans) finely chopped
½ cup Carrot finely chopped
½ cup Capsicum (Green bell pepper) finely chopped or cubes
Salt to taste
Black pepper powder to taste
1 tablespoons tomato ketchup /sauce
1 tbsp Green chilli sauce
1 tsp soya sauce

Process

Heat the oil in a pan or wok on medium-high heat. Once hot add chopped garlic and green chili. Saute for 30 seconds

Then add sliced onions.

Cook till they becomes translucent.

Then add rest of the vegetables (beans, carrots, bell pepper, green peas ).

Mix well and cook with stirring frequently.

Cook for 2-3 minutes, they will start to soften. We don’t want mushy vegetables, they should have crunch in it.

Add steamed rice, salt and pepper.

Mix well.

Lastly add soy sauce, tomato ketchup and green chilli sauce and mix gently.

Serve it to a serving dish,

For a variation, You can add or remove the vegetables as per your choice. you can use mushrooms, baby corn, bean sprouts.

To add protein here, you can add chopped or crumbled tofu, soya chunks. If you eat eggs, then you can add scrambled egg or chopped hard boiled egg.

Serving suggestion: Serve this veg fried rice with any indo-chinese gravy dish e.g. vegetable manchurian, gobi manchurian gravy, chilli paneer, paneer manchurian.
