It's a Fusion » Indo-Chinese RecipeIngredients for Veg Fried Rice Recipe2 cups Cooked rice3 tablespoon oil1 tbsp Garlic finely chopped4 Green chilies chopped finely or slit⅓ 1 medium sliced Onion 10-12 or ½ cup Green beans (French beans) finely chopped½ cup Carrot finely chopped½ cup Capsicum (Green bell pepper) finely chopped or cubes Salt to tasteBlack pepper powder to taste1 tablespoons tomato ketchup /sauce1 tbsp Green chilli sauce1 tsp soya sauce Process Heat the oil in a pan or wok on medium-high heat. Once hot add chopped garlic and green chili. Saute for 30 seconds Then add sliced onions.Cook till they becomes translucent. Then add rest of the vegetables (beans, carrots, bell pepper, green peas ).Mix well and cook with stirring frequently.Cook for 2-3 minutes, they will start to soften. We don’t want mushy vegetables, they should have crunch in it. Add steamed rice, salt and pepper.Mix well.Lastly add soy sauce, tomato ketchup and green chilli sauce and mix gently. Serve it to a serving dish, For a variation, You can add or remove the vegetables as per your choice. you can use mushrooms, baby corn, bean sprouts.To add protein here, you can add chopped or crumbled tofu, soya chunks.
