VEG SCHEZWAN POTLI - (Serves - 4)

Ingredients

¼ cup finely chopped mixed capsicum (red, yellow and green)
½ medium green zucchini, finely chopped
¼ medium cabbage, finely chopped
1 tablespoon + 1 teaspoon Jain schezwan sauce
1½ tablespoons oil + for deep-frying
1 cup refined flour (maida) + for dusting
Salt to taste
Crushed black peppercorns to taste
1-2 green chillies, finely chopped
½ teaspoon sugar
½ teaspoon dried ginger powder
½ teaspoon soy sauce
2 teaspoons green chilli sauce
10 grams processed cheese + as required

Method

1. Take 1 cup flour in a bowl. Add 1 tablespoon schezwan sauce, salt, ½ tablespoon oil, crushed peppercorns and sufficient water and knead into a semi-soft dough.
2. Heat sufficient oil in a kadai.
3. To prepare stuffing, heat 1 tablespoon oil in a non-stick pan. Add green chillies, mixed capsicum and sauté for 30 seconds.
4. Add zucchini and cabbage and sauté for 1 minute. Add crushed peppercorns, sugar, dried ginger powder and salt and mix well.
5. Add soy sauce, green chilli sauce and remaining schezwan sauce and sauté for 30 seconds. Switch off heat, grate processed cheese and mix well. Transfer in a bowl and cool.
6. Divide the dough into equal portions and roll out into small thin discs, dusting with some flour.
7. Put some stuffing in the center of each disc, pleat and bring the edges together and press the center to seal and shape into potli.
8. Deep-fry the potlis in hot oil on low heat till golden brown and crisp. Drain on absorbent paper.
9. Brush some schezwan sauce on a serving platter. Grate some cheese, place the fried potlis and serve hot.
