Soya granules and kidney beans patty sandwiched between mini burger buns.

VEG SLIDERS

Ingredients

1 cup red kidney beans, soaked overnight and boiled
½ cup soya granules, soaked in warm water and drained
1 large potato, boiled, peeled and grated
8 mini burger buns
1 medium onion, finely chopped
1 teaspoon paprika
¾ teaspoon onion powder
¾ teaspoon garlic powder
½ teaspoon dried mixed herbs
½ teaspoon red chilli flakes
Salt to taste
2-3 fresh parsley sprigs
Dried breadcrumbs for coating
½ medium purple cabbage
6-8 tablespoons yogurt
¾ teaspoon smoked paprika
Olive oil for brushing and searing
Tomato ketchup for spreading
4-5 Romaine lettuce leaves, roughly torn
Readymade salad (mixed lettuce, cherry tomatoes, walnuts) for serving
Lemon vinaigrette for drizzling

Method

1. Take the kidney beans in a bowl and mash well. Add onion, soya granules, paprika, onion powder, garlic powder, mixed herbs, chilli flakes, salt and potato.
2. Finely chop 3-4 parsley sprigs and add. Mix well.
3. Divide the mixture into equal portions and shape them into patties and coat them with breadcrumbs.
4. Preheat oven at 180º C.
5. To make cabbage salad, halve, slice purple cabbage and put in another bowl. Add yogurt, smoked paprika and salt and mix well.
6. Roughly chop remaining parsley sprigs and to the cabbage-yogurt mixture. Mix well.
7. Place the burger buns on a baking tray and brush some olive oil on them. Put the tray in the preheated oven and toast for 2-3 minutes.
8. Heat some olive oil in a non-stick pan. Place the patties on it and sear till golden brown from both the sides. Set aside.
9. Slice the toasted burger buns horizontally into halves. Spread some tomato ketchup on the inner sides of the bun halves.
10. Place lettuce on the base buns, top with a patty and some cabbage salad.
11. Place the readymade salad on a serving platter. Drizzle the lemon vinaigrette on top. Place the sliders alongside with the remaining bun halves and serve immediately.
