This super healthy recipe is a great main course that can be eaten on it’s own or with rotis.VEGAN MOONG KOFTAIngredients1 cup whole green gram (moong)1 medium onion, finely chopped2 green chillies½ inch finely chopped gingerRock salt to taste½ tsp red chilli powder¼ tsp turmeric powder1 tsp cumin powder1 tbsp crushed coriander seedsA pinch of garam masala powderTomato gravy4 medium tomatoes, blanched and halved1 tsp cumin seeds½ tsp red chilli powder¼ tsp turmeric powder1 tsp cumin powder1 tsp coriander powderRock saltto tasteFresh coriander sprig for garnishMethod1. In a chopper, add whole green gram, onion, green chillies, ginger and rock salt and process to a coarse mixture. Transfer into a large bowl.2. Addred chilli powder, turmeric powder, cumin powder, crushed coriander seeds, garam masala and mix well. 3. Heat sufficient water in a steamer, drop in small portions of the mixture into the steamer basket lined with banana leaf, and steam for 10-15 minutes. 4. Preheat the oven at 180˚C.5. For the gravy, transfer the prepared pakode on a baking tray and bake for 10-15 minutes.6. Take blanched tomatoes ina blender jar and blend toa fine paste.7. Heat a pan, add cumin seeds and dry roast till fragrant.Add the prepared tomato puree and mix well. 8. Add red chilli powder, turmeric powder, cumin powder and coriander powder, rock salt and mixwell. 9. Add 1 cup water and mix. Cook for 2-3 minutes. Add the pakode and mix well. Add ½ cup water and mxi. Cook for a minute.10. Garnish with coriander sprig and serve hot.
