Try making this butter free pav bhaji and be surprised on how delicious it is.VEGAN PAV BHAJIIngredients1 medium carrot2 medium onions1 medium capsicum2 medium tomatoes6 dried red chillies, soaked5-6 garlic clovesRock salt to taste10-15 cauliflower florets, steamed2 medium potatoes, cut into ½ inch cubes and steamed½ cup steamed green peas½ tsp red chilli powder¼ tsp turmeric powder1½ tbsps pav bhaji masala 2 tbsps chopped fresh coriander leavesFresh coriander sprig for garnishChopped onion to serveLemon wedge to serveWhole wheat pavs to serveMethod1. Chop carrot into small cubes and steam them till soft and set aside. Finely chop onions and capsicum. Roughly chop tomatoes. Set aside.2. In a blender jar, add soaked chillies, garlic and ¼ cup water and blend to a fine paste. 3. Heat a pan, add the chopped onion, capsicum and tomatoes and rock salt. Sauté for 2-3 minutes or till the tomatoes turn soft and pulpy.4. Add the prepared paste and mix well. Cook for a minute. Add steamed carrots, steamed cauliflower, steamed potatoes and steamed green peas and mix well. 5. Add red chilli powder, turmeric powder, and pav bhaji masala and mix till well combined. Cook for a minute.6. Mash the mixture using a masher and add 1 ½ cups water and mix. Cook for 1 minute. 7. Mash the mixture again and cook for 2-3 minutes. Add chopped coriander and mix, take the pan off the heat. 8.
