Vegetable Curry with Brown Rice
Ingredients for Vegetable Curry:
Oil 1/2 cup
Ginger (chopped) 1 tsp
Garlic (chopped) 1 tbsp
Cauliflower 2 cups
Capsicum (small cubes) 1 cup
Peas 1 cup
Carrots (sliced) 1 cup
Onion (cubes) 1 cup
Tomato paste 3 tbsp
Water 1/2 cup + 1/2 cup
Red chili powder 1 tbsp
Coriander powder 1 tbsp
Cumin powder 1 tbsp
Salt 1 tsp
Garam masala 1 tbsp
Coconut milk 1 cup
Cream 1/2 cup
Curry leaves as required

Ingredients for Brown Rice:
Guard Brown Basmati Rice 2 cups
Water (for soaking) as required
Oil 3 tbsp
Garlic (chopped) 1 tbsp
Black pepper powder 1/2 tsp
Salt 1 tbsp
Chicken stock 4 cups
Guard Brown Basmati Rice (soaked) 2 cups

Directions for Vegetable Curry Preparation:
1. In a pan heat oil and add ginger and garlic. Cook for a minute.
2. Add cauliflower, capsicum, peas, carrots, onion and cook for 3-4 minutes.
3. Add tomato paste, water and mix it well.
4. Add red chili powder, coriander powder, cumin powder, salt and cook until veggies are half done.
5. Add coconut milk and cover and cook over medium flame until veggies are fully done.
6. Add cream and curry leaves and give it a good mix.
7. Your Vegetable Curry is ready.
Directions for Brown Rice Preparation:
8. Soak Guard Brown Rice for 30 minutes.
9. In a pan heat oil and add garlic, saute for a minute.
10. Add salt, black pepper, chicken stock and cook until starts to boil.
11. Add soaked rice and cook until 80% stock dries out.
12. Cover and steam over low flame for 20 minutes.
13. Your Brown Rice is ready. Serve it Vegetable Curry and enjoy.
