Vegetable Pesto Rings | Sanjeev Kapoor Khazana

Fresh cut vegetables mixed with boiled mashed potatoes and pesto, shaped into rings and deep fried.

VEGETABLE PESTO RINGS

Ingredients

7-8 cauliflower florets, finely chopped
3-4 babycorn, finely chopped
1 medium carrots, peeled and finely chopped
3-4 French beans, stringed and finely chopped
3-4 medium potatoes, boiled, peeled and mashed
5-6 tablespoons pesto
Oil for deep-frying
3-4 tablespoons refined flour
Salt to taste
Black pepper powder to taste

Method

1. Heat sufficient oil in a pan.
2. Combine cauliflower, babycorn, carrot, French beans in a bowl and mix. Add potatoes, refined flour, salt and pepper powder and mix well. Add pesto and mix again.
3. Divide the mixture into equal portions, flatten and make a dent in the centre. Deep-fry the rings in the hot oil till golden and crisp. Drain on absorbent paper.
4. Serve hot.

Preparation Time: 8-10 minutes
Cooking Time: 8-10 minutes
