Vegetarian spaghetti with mushrooms and spinach made easy. In this veggie version though, the noodles soak up the flavor.VEGETABLE SPAGHETTI Ingredients2 cups boiled spaghetti1 tablespoon olive oil ¼ cup green zucchini strips ¼ medium red capsicum, cut into strips¼ medium yellow capsicum, cut into strips¼ cup broccoli florets1 cup fresh tomato puree1 tablespoon red chilli sauce2 tablespoons tomato ketchup8-10 basil leaves½ teaspoon dried oregano½ teaspoon red chilli flakes Salt to taste 1 tablespoon finely chopped fresh parsley Method1. Heat olive oil in a non-stick pan. Add zucchini, red capsicum, yellow capsicum and broccoli and sauté for a minute. 2. Add tomato puree, mix well and cook for 4-5 minutes. Add chilli sauce, tomato ketchup and mix well.3. Add torn basil leaves, oregano, chilli flakes, salt and mix well. Add spaghetti and toss. Add parsley and mix well.4. Sprinkle oregano and chilli flakes and serve hot.
