Vegetable Spaghetti In Gujarati | Snacky Ideas by Amisha Doshi | Sanjeev Kapoor Khazana

Vegetarian spaghetti with mushrooms and spinach made easy. In this veggie version though, the noodles soak up the flavor.

VEGETABLE SPAGHETTI

Ingredients

2 cups boiled spaghetti
1 tablespoon olive oil
¼ cup green zucchini strips
¼ medium red capsicum, cut into strips
¼ medium yellow capsicum, cut into strips
¼ cup broccoli florets
1 cup fresh tomato puree
1 tablespoon red chilli sauce
2 tablespoons tomato ketchup
8-10 basil leaves
½ teaspoon dried oregano
½ teaspoon red chilli flakes
Salt to taste
1 tablespoon finely chopped fresh parsley

Method

1. Heat olive oil in a non-stick pan. Add zucchini, red capsicum, yellow capsicum and broccoli and sauté for a minute.
2. Add tomato puree, mix well and cook for 4-5 minutes. Add chilli sauce, tomato ketchup and mix well.
3. Add torn basil leaves, oregano, chilli flakes, salt and mix well. Add spaghetti and toss. Add parsley and mix well.
4. Sprinkle oregano and chilli flakes and serve hot.
