A flavourful meal.VEGETABLE STEWIngredients2 medium potatoes, peeled and cut into ½ inch cubes10-12 French beans, cut into ½ inch pieces2 medium carrots, cut into ½ inch cubes1½ cups coconut milk 2 tsps coconut oil½ inch cinnamon stick2 cloves1 green cardamom1 tbsp finely chopped garlic1 inch ginger, finely chopped2-3 green chillies, slit8-10 curry leaves, choppedSalt to tasteA pinch of white pepper powderA large pinch of sugarIdiyappams to serveMethod1. Heat oil in a non-stick kadai, add cinnamon, cloves and green cardamom and sauté till fragrant.2. Add garlic and sauté for a few seconds. Add ginger and green chillies and mix well. Cook for 1 minute.3. Add curry leaves and mix well. Add potatoes, French beans and carrot and sauté for a minute.4. Add salt, mix and cover and cook for 10-15 minutes. Reduce the heat and add coconut milk and white pepper powder, mix and cook till the mixture comes to a boil.5. Add sugar and mix well, switch the heat off and serve hot with idiyappams.
