A beautiful combination of vegetables cooked with mildly spiced coconut milk. A perfect dish to go with appams, bread or even plain steamed rice and there you have it! A flavourful meal.

VEGETABLE STEW

Ingredients

2 medium potatoes, peeled and cut into ½ inch cubes
10-12 French beans, cut into ½ inch pieces
2 medium carrots, cut into ½ inch cubes
1½ cups coconut milk
2 tsps coconut oil
½ inch cinnamon stick
2 cloves
1 green cardamom
1 tbsp finely chopped garlic
1 inch ginger, finely chopped
2-3 green chillies, slit
8-10 curry leaves, chopped
Salt to taste
A pinch of white pepper powder
A large pinch of sugar
Idiyappams to serve

Method

1. Heat oil in a non-stick kadai, add cinnamon, cloves and green cardamom and sauté till fragrant.
2. Add garlic and sauté for a few seconds. Add ginger and green chillies and mix well. Cook for 1 minute.
3. Add curry leaves and mix well. Add potatoes, French beans and carrot and sauté for a minute.
4. Add salt, mix and cover and cook for 10-15 minutes. Reduce the heat and add coconut milk and white pepper powder, mix and cook till the mixture comes to a boil.
5. Add sugar and mix well, switch the heat off and serve hot with idiyappams.
