Vegetarian Indian Lunch | Lunch Box Series-3 (Veg) | Indian Mom's Kitchen

This Vegetarian Indian Lunch is simple and also very healthy.
MENU:
Tindora Batata Shaak/Ivy Gourd Potato Sabzi:
(Ingredients in the order of instruction)
2 Potatoes
250 gms Tindora ( Ivy Gourd)
4 tbsp Oil
1 tsp Mustard seeds
1/2 tsp Cumin
A pinch of Hing
1 tbsp sliced Garlic
Few Curry leaves
1/4 tsp Turmeric powder
1 tsp Kashmiri Chilli powder
2 chopped Green Chillies
1 tsp grated Jaggery
Salt to taste
1/2 tsp Cumin powder
1/2 tsp Coriander powder
1/2 tsp Garam masala

Gujarati Dal:
1 cup washed and drained Tuvar Dal
Curry leaves
2 finely chopped Tomatoes
Salt to taste
1/4 tsp Turmeric powder
11/2 cups Water
3 chopped Green Chillies
1 tbsp chopped Ginger
2 tsp grated Jaggery
5 pieces of Kokam
1 cup Water
Chopped Coriander leaves
2 tbsp Oil
1 tsp Mustard seeds
1/2 tsp Cumin
1/4 tsp Fenugreek
1/2 tsp Hing
3 dry Red Chillies
2 Cinnamon
2 Cloves
1 tbsp sliced Garlic
1/2 tsp Kashmiri Chilli powder
1/4 tsp Turmeric powder

Sukdi/Gur Papdi:
1/2 cup Ghee
1 cup Wheat flour
1/2 tsp Cardamom powder
3/4 cup grated Jaggery
Chopped nuts
