Veggie Stuffed Chicken Piccata | Sanjeev Kapoor Khazana

Hammered chicken pieces stuffed with vegetables, seasoned with balsamic vinegar and baked.

VEGGIE STUFFED CHICKEN PICCATA

Ingredients

2 boneless chicken breasts
Butter for greasing and brushing
½ medium green zucchini, cut into 2 inch strips
1 cup mixed bell pepper strips
Salt to taste
Crushed black peppercorns to taste
Dried mixed herbs for sprinkling
Red chilli flakes for sprinkling
Balsamic vinegar for drizzling

Method

1. Preheat oven 180° C.
2. Thinly slice chicken breasts horizontally and flatten them using a hammer. Halve each flattened chicken piece.
3. Grease the baking tray with some butter and place chicken pieces. Place one zucchini strip and few mixed bell pepper strips in the center of each chicken piece.
4. Sprinkle some salt, crushed peppercorns, dried mixed herbs and chilli flakes on top and drizzle some balsamic vinegar. Roll the prepared chicken pieces, brush some butter on top and drizzle some more balsamic vinegar.
5. Put the tray in preheated oven and bake for 8-10 minutes.
6. Serve hot.
