Vermicelli Shami Kabab Rolls

Ingredients for Shami Mixture:
Chicken boneless (cubes) 700 g
Split chickpeas (soaked) 1 cup
Water 5 cups
Black peppercorns 15-20
Star anise 2
Cumin seeds 1 tsp
Bay leaves 2
Garam masala powder 1 tbsp
Red chili flakes 1 tbsp
Coriander powder 1 tbsp
Chaat masala 1 tsp
Salt 1 tsp / to taste
Cabbage (julienne) 1 cup
Carrot (julienne) 1/2 cup
Capsicum (julienne) 1 cup

Ingredients for Dough:
All-purpose flour 3 cups
Cumin seeds 1 tsp
Carom seeds a pinch
Salt 1/2 tsp / to taste
Oil 2 tbsp
Water as required

Ingredients for Assembling:
Prepared shami kabab
Prepared dough
Flour mixture (All-purpose flour 1/2 cup + water 1 cup)
Vermicelli as required
Oil (for frying) as required

Directions for Shami Mixture Preparation:
1. In a pot heat water and add chicken, split chickpeas, water, black peppercorns, star anise, cumin seeds, bay leaves, garam masala powder, red chili flakes, coriander powder, chaat masala, salt and mix it well.
2. Boil until water evaporates. Your Shami Mixture is ready. Let it cool at room temperature.
3. Transfer the mixture to a bowl and now mash the mixture in hands.
4. Add cabbage, carrot, capsicum and mix it again.
5. Now take handful of mixture and give it a shape of medium sized seekh kabab. Set aside.
Directions for Dough Preparation:
6. In a bowl add flour, cumin seeds, carom seeds, salt, oil, water and mix it well to knead a soft dough. Cover and let it rest for 15-20 mins. Set aside.
Directions for Assembling:
7. Take the prepared dough and cut it into 4 equal parts. Make dough balls from each part and roll them out into flat circle.
8. Cut the sides to make square shape. Divide the dough into 4 square sheets.
9. Place the prepared seekh kabab on each sheet and roll the sheet around it. seal it with flour mixture.
10. Dip the 2 ends of this reel in flour mixture and then coat in vermicelli.
Note: They can be frozen in an airtight box for up to 1 month
11. Now deep fry the prepared rolls until crispy and golden brown.
12. Your Vermicelli Shami Kabab Rolls are ready.
