Delicious vegan recipe Butter Chickpea Curry/

INGREDIENTS
Butter Chickpea Curry

1 Brown Onion, diced
4 Garlic Cloves, minced
1 & 1/2 Tbsp of Mild Yellow Curry Powder
1 Tsp of Ground Cumin
1/2 Tsp of Salt
1/2 Cup of Vegetable Stock
1 Can of Diced Tomatoes
1 Can of Chickpeas, drained
1 Tbsp of Lemon Juice
1 Can of Coconut Milk (Full Fat)
1/4 Cup of Vegan Butter
1 Tsp of Sugar
Rice to Serve

METHOD
Heat oil in a frypan over medium heat. Add onion until soft. 4-5 minutes.

Add garlic and all of the spices to the frypan and cook, stirring for 1 minute.

Add vegetable stock, then add diced tomatoes, chickpeas and lemon juice, stirring until mixed well

Bring to a simmer and cook for 20 minutes

Add coconut milk, butter and sugar. Stir until smooth and vegan butter has melted

Serve with rice.
