Hearty Vegan Lentil Meatloaf

INGREDIENTS:

- 2 cups lentils (canned, drained, rinsed)
- 1 onion, diced
- 2 carrots, diced
- 1/2 cup red capsicum, diced
- 1 1/4 cup mushrooms, diced
- 2 garlic cloves, minced
- 3 tbsp tomato paste
- 2 tbsp BBQ sauce
- 2 tbsp flaxmeal
- 1 tbsp parsley
- Salt & Pepper
- 1 cup rolled oats
- 1/2 cup breadcrumbs
- 1/3 cup tomato sauce
- Brown sugar

METHOD:
1 Preheat your oven to 180C (356F).
2 Saut diced veggies until tender.
3 Combine sauted veggies, lentils, tomato paste, BBQ sauce, flax meal, parsley, oats, and breadcrumbs in a food processor.
4 Shape the mixture into a loaf and bake for 35 minutes.
5 Spread tomato sauce, sprinkle brown sugar, and bake for an additional 15 minutes.
6 Cool, slice, and enjoy this vegan twist on a classic!
