Hearty Two Bean Veggie Chilli- 1/4 cup vegan butter- 1 red onion (finely diced)- 1 zucchini (finely diced)- 1 red capsicum (finely diced)- 1 can of black beans, drained and rinsed- 1 can of chickpeas or cannellini beans, drained and rinsed- 1 cup tomato sauce- 2 tbsp tomato paste- 1 tbsp dried oregano- 1 tsp dried cumin- 1 tsp chilli powder (or more to taste)- Salt and pepper to tasteMETHOD- Melt butter in a large pot and saute red onion, zucchini and capsicum. Stirring occasionally for about 8 minutes- Stir in remaining ingredients, reducing heat to medium - low and simmer for 10 minutes or until sauce starts to thickens- Serve and top with vegan sour vegan and diced spring onion
