Hearty Two Bean Veggie Chilli

- 1/4 cup vegan butter
- 1 red onion (finely diced)
- 1 zucchini (finely diced)
- 1 red capsicum (finely diced)
- 1 can of black beans, drained and rinsed
- 1 can of chickpeas or cannellini beans, drained and rinsed
- 1 cup tomato sauce
- 2 tbsp tomato paste
- 1 tbsp dried oregano
- 1 tsp dried cumin
- 1 tsp chilli powder (or more to taste)
- Salt and pepper to taste

METHOD

- Melt butter in a large pot and saute red onion, zucchini and capsicum. Stirring occasionally for about 8 minutes

- Stir in remaining ingredients, reducing heat to medium - low and simmer for 10 minutes or until sauce starts to thickens

- Serve and top with vegan sour vegan and diced spring onion
