BIBINGKA PANCAKES1 cup rice flour1 cup all purpose flour4 tablespoons sugar1 tablespoon baking powder1/4 teaspoon salt2 medium eggs2 tablespoons oil (or butter)2 cups coconut milk1/2 teaspoon vanilla extract cup of buttersalted egg (sliced)1 can condensed milk1 cup freshly grated coconut1/2 block of processed cheddar cheeseProcedure:1. In a large bowl, whisk in the eggs. Add in all the other pancake ingredients and mix well.2. Melt a tablespoon of butter in a nonstick pan and pour in cup of pancake batter.
