Vodka Cupcakes | Sanjeev Kapoor Khazana

Vodka flavoured cupcakes are the perfect tea time snack.

VODKA CUPCAKES

Ingredients

⅛ cup vodka
1¼ cups refined flour
1½ teaspoons baking powder
½ teaspoon salt
½ cup butter
¾ cup castor sugar
1 teaspoon vanilla essence
1 egg
1 egg white
½ cup milk

Method

1. Preheat oven to 180° C. Place individual silicon cupcake moulds in a baking tray and line them with paper cup cases.
2. Sieve flour, baking powder and salt in a bowl.
3. Cream together butter and castor sugar in another bowl using an electric beater. Add vanilla essence and whisk well.
4. Break 1 egg and whisk. Add egg white and whisk. Add vodka and whisk well. Add flour mixture and fold well. Add milk and mix well into a smooth batter.
5. Fill a piping bag with batter and pipe out into lined silicon cupcake moulds filling ¾ of it.
6. Put the tray into preheated oven and bake for 15-20 minutes. Remove from heat, cool and demould.
7. Serve.
