Vodka flavoured cupcakes are the perfect tea time snack.VODKA CUPCAKESIngredients⅛ cup vodka1¼ cups refined flour1½ teaspoons baking powder½ teaspoon salt½ cup butter¾ cup castor sugar1 teaspoon vanilla essence1 egg1 egg white½ cup milkMethod1. Preheat oven to 180° C. Place individual silicon cupcake moulds in a baking tray and line them with paper cup cases.2. Sieve flour, baking powder and salt in a bowl. 3. Cream together butter and castor sugar in another bowl using an electric beater. Add vanilla essence and whisk well. 4. Break 1 egg and whisk. Add egg white and whisk. Add vodka and whisk well. Add flour mixture and fold well. Add milk and mix well into a smooth batter.5. Fill a piping bag with batter and pipe out into lined silicon cupcake moulds filling ¾ of it.6. Put the tray into preheated oven and bake for 15-20 minutes. Remove from heat, cool and demould.7. Serve.
