वॉर्म एप्रिकॉट टी | Warm Apricot Tea | Sanjeev Kapoor Khazana

A unique tea infused with the delicate flavours of apricot that are a touch of natural sweetness and tanginess into this.

WARM APRICOT TEA

Ingredients

8-10 golden apricots
2 tea bags
4-6 tbsps brown sugar
4 green cardamoms
2 inch cinnamon stick
Fresh mint sprigs for garnish
Cookies for serving

Method

1. Roughly chop the apricots.
2. Heat a nonstick pan. Add the chopped apricots, brown sugar, 4 cups water and mix well.
3. Once the mixture comes to a boil, break open the green cardamoms and add to the pan. Add cinnamon and cook on medium heat for 6-8 minutes or till apricots turn soft.
4. Discard the green cardamoms and cinnamon. Strain the mixture through a fine sieve.
5. Transfer the cooked apricots in a blender jar and grind to a fine paste.
6. Dip tea bag and let the flavour infuse for a minute.
7. Add a spoon of ground mixture in 4 individual cups and pour the tea mixture over.
8. Garnish with mint sprigs and serve hot with cookies.
