Watermelon and Fresh Mozzarella Salad | Sanjeev Kapoor Khazana

This is a light refreshing salad that is perfect for hot summer days. It goes great served along side most any grilled meats or seafood. 

WATERMELON AND FRESH MOZZARELLA SALAD

Ingredients

1 small watermelon, deseeded and cut into cubes
8-12 fresh mozzarella cheese balls
½ cup balsamic vinegar
1 tablespoon castor sugar
8-12 fresh basil leaves as required
Mixed beetroot and sunflower micro greens as required

Method

1. Heat balsamic vinegar in a non-stick pan. Add castor sugar, swirl and cook till reduced.
2. Place one cheese ball on a basil leaf and insert in each plastic skewer alongwith a watermelon cube.
3. Put some mixed micro greens in a serving platter and place skewered cheese balls-watermelon on the sides.
4. Drizzle some balsamic reduction over the skewers and micro greens and serve immediately.
