This is a light refreshing salad that is perfect for hot summer days. It goes great served along side most any grilled meats or seafood. WATERMELON AND FRESH MOZZARELLA SALADIngredients1 small watermelon, deseeded and cut into cubes8-12 fresh mozzarella cheese balls½ cup balsamic vinegar1 tablespoon castor sugar8-12 fresh basil leaves as requiredMixed beetroot and sunflower micro greens as requiredMethod1. Heat balsamic vinegar in a non-stick pan. Add castor sugar, swirl and cook till reduced.2. Place one cheese ball on a basil leaf and insert in each plastic skewer alongwith a watermelon cube.3. Put some mixed micro greens in a serving platter and place skewered cheese balls-watermelon on the sides.4.
