Watermelon peel is very nutritious & can be made into a masaledar subzi. It is quite simple to cook as per my recipe and once you have tasted it, you will never throw the peel away.

Ingredients
Mustard Oil or Oil or ghee – 4 tbsp
Mustard seeds -1tsp
Dry red chilli – 2nos
Cumin – 1tsp
Fennel Seeds -1 tsp
Asafoestida (heeng) -½ tsp
Ginger chopped – 2tsp
Garlic Chopped – 2tsp
Green chilli – 1 no
Onion Chopped – ½ cup
Turmeric – ½ tsp
Chilli powder – ¾ tsp
Coriander powder -2tsp
Watermelon rind (peeled & diced) – 2cups
Dry methi leaves -1tsp
Salt – to taste
Coriander leaves – handful
Amchur powder or chaat masala – 1tsp
