Watermelon & Mastiha Refreshing Summer Drink

Watermelon is such a refreshing fruit on its own. In this recipe, I juiced it and served it with a Mastiha & Rose scented simple syrup to add a floral Mediterranean twist. Serve this drink on any hot summertime day to cool down and relax.

Ingredients
4 cups seedless watermelon, cubed
Mint sprigs for garnish
For the mastiha and rose syrup:
1 cup of water
1 cup granulated sugar
2 teaspoons mastic
1 tablespoon rose water
Instructions
Make the syrup:
Combine the sugar, water, and mastiha in a pot and bring to a boil. Once the sugar is dissolved remove from the heat and stir in the rose water. Set aside to cool. Strain and transfer into an airtight jar and refrigerate up to 1 week.

Puree the watermelon in a blender until smooth. Pass it through a strainer to remove the pulp and refrigerate the juice until it is chilled.
Using a small ice cream scoop, create balls of watermelon and freeze.
Serve the watermelon juice alongside the frozen watermelon balls and the syrup with some mint. Enjoy!
