The history of this dish is tied to the evolution of the wine industry on Sicily at the hands of English wine merchants and their French household chefs.Ingredients:375 mL (1½ cups) all purpose flour7 mL (1½ tsp) salt7 mL (1½ tsp) fresh ground pepper60 mL ( ½ cup) olive oil2 skinless boneless chicken breasts500g (1 lb) mushrooms250 mL (1 cup) dry MarsalaMethod:Butterfly and flatten the chicken breasts.Mix the salt, pepper, and flour.Dredge the chicken in the flour mixture.Heat a pan on medium high, and coat with the olive oil.Brown the chicken on both sides.Slice the mushrooms.Remove the chicken and fry the mushrooms in the same pan.(Add more oil if needed)When the mushrooms have released their moisture, add in the Marsala and reduce to a thick syrup.Add the chicken back to the pan, and cook until chicken is done.
