No different really than roasting a squash --Chop open the pumpkin and remove the seeds and innards, leaving just the pumpkin flesh.Coat the inside of the pumpkin with coconut oil or butter, and place skin-side-down on a baking sheet.Sprinkle with cinnamon and sugar -- more for a dessert, less for a side dish.Roast in a 400 degree oven for 40-50 minutes or until a fork is easy to push into the pumpkin. How long this takes will depend a lot on how thick the pumpkin was.Let cool until it can be handled. Scoop out of the skin and enjoy!
