What to do with LEFTOVER PUMPKIN after Halloween ROAST IT FOR DESSERT!

No different really than roasting a squash --

Chop open the pumpkin and remove the seeds and innards, leaving just the pumpkin flesh.
Coat the inside of the pumpkin with coconut oil or butter, and place skin-side-down on a baking sheet.
Sprinkle with cinnamon and sugar -- more for a dessert, less for a side dish.
Roast in a 400 degree oven for 40-50 minutes or until a fork is easy to push into the pumpkin. How long this takes will depend a lot on how thick the pumpkin was.

Let cool until it can be handled. Scoop out of the skin and enjoy!
