WHOLE WHEAT COOKIES

Ingredients

1 cup whole wheat flour
2 tablespoons wheat bran
100 grams butter, chilled
½ cup refined flour + for dusting
3 tablespoons sugar substitute
Milk as required

Method

1. Preheat oven to 180º C.
2. Cut butter into small cubes and transfer in a bowl.
3. Add wheat flour, refined flour, wheat bran and sugar substitute to butter cubes and mix well till it resembles breadcrumbs.
4. Add some milk and knead into a semi-soft dough.
5. Dust some refined flour on the worktop, divide the dough into large equal portions and roll them into thick sheets.
6. Cut each sheet into medium size serrated cookie cutter and place them on a baking tray.
7. Put the tray into the preheated oven and bake for 18-20 minutes. Remove from oven and cool.
8. Serve or store in an air-tight jar.
