Freshly baked muffins made with whole meal flour and bananas.WHOLEMEAL BANANA BREAKFAST MUFFINIngredients175 grams whole meal flour125 grams refined flour5 bananas, peeled2 teaspoons baking powder175 grams walnuts, chopped2 eggs¼ cup honey75 ml oil½ teaspoon saltMethod1. Preheat oven at 180ºC. Line a silicon muffin mould tray with muffin cases. 2. Combine refined flour, baking powder and whole meal flour in a bowl and mix. Add walnuts and mix.3. Mash the bananas in another bowl. Add eggs, honey, oil and salt and whisk well till well combined. 4. Add the banana mixture to the flour mixture and mix till well combined.5. Spoon the prepared mixture into the lined moulds, place the tray in the preheated oven and bake for 25 minutes.6. Remove from oven and cool. Demould and serve.
