Wholemeal Banana Breakfast Muffin | Sanjeev Kapoor Khazana

Freshly baked muffins made with whole meal flour and bananas.

WHOLEMEAL BANANA BREAKFAST MUFFIN

Ingredients

175 grams whole meal flour
125 grams refined flour
5 bananas, peeled
2 teaspoons baking powder
175 grams walnuts, chopped
2 eggs
¼ cup honey
75 ml oil
½ teaspoon salt

Method

1. Preheat oven at 180ºC. Line a silicon muffin mould tray with muffin cases.
2. Combine refined flour, baking powder and whole meal flour in a bowl and mix. Add walnuts and mix.
3. Mash the bananas in another bowl. Add eggs, honey, oil and salt and whisk well till well combined.
4. Add the banana mixture to the flour mixture and mix till well combined.
5. Spoon the prepared mixture into the lined moulds, place the tray in the preheated oven and bake for 25 minutes.
6. Remove from oven and cool. Demould and serve.

Preparation Time: 10-12 minutes
Cooking Time: 20-25 minutes
