This salad is full of colourful and vibrant winter vegetables combined together the super healthy puffed amaranth!WINTER SALAD WITH AMARANTHIngredients1 cup puffed Amaranth (rajgira)1 large white radish1 medium English cucumber1 medium turnip1 medium carrot2 inch fresh turmeric piece3-4 fresh green garlic greens1 orangeDressing1 tbsp kasundi mustardSalt to tasteCrushed black peppercorns to taste½ lemon2 tbsps sesame oilGarnishToasted black sesame seedsMethod1. Cut radish, cucumber, turnip, carrot and fresh turmeric into thin strips and set aside. 2. Boil 1½ cups water in a non-stick pan, add a few pieces of fresh turmeric. Add turnip strips and cook for 1-2 minutes, drain into cold water. 3. To make the dressing, take 1 tbsp kasundi mustard in a small jar, add salt, crushed black peppercorns, squeeze the juice of lemon, sesame oil, cover and shake well. 4. Transfer all the vegetables strips, drain the turnip and add in a large bowl, snip green garlic shoots into 1 inch strips and add. Peel orange and add the wedges, add puffed amaranth and drizzle the dressing and gently toss. Serve.
