Wonder Cake Batter | Sanjeev Kapoor Khazana

Making the perfect cake batter is the most important step of making any cake. Learn how to make this versatile wonder cake batter with the perfect texture and fluffiness.

WONDER CAKE BATTER

Ingredients

1 cup butter, softened
1 cup granulated sugar
1 cup eggs (approx. 4 eggs)
A few drops of vanilla essence
1 cup refined flour (maida)

Method

1. Preheat the oven at 180℃.
2. Take butter in a large bowl, add sugar and beat with the help of an electric beater till well combined. Scrape the sides of the bowl and bring the mixture to the centre and continue to beat till it turns light and fluffy.
3. Scrape the sides and bring the mixture to the centre, add in the eggs little at a time and beat well after each addition. Add vanilla essence and continue to beat till the mixture turns fluffy and the eggs are well combined.
4. Sift the refined flour directly into the bowl and gently fold in till a smooth and light batter is formed.
5. Transfer the batter into a greased cake tin of your choice till it is ¾ filled. Tap a few times to remove any air bubbles. Place the cake tin in the preheated oven and bake for 40-45 minutes.
6. Bring the cake out of the oven and allow to cool slightly. Run a knife along the sides of the cake tin and de-mould it on a wire cooling rack.
7. Cut into wedges or allow to cool completely and use as required.
