Masala Preparation:
Oil 2-3 tbsp
Onion (finely chopped) 1/4 cup
Cumin seeds 1 tsp
Turmeric powder 1/4 tsp
Red chili powder 1/2 tsp
Red chili flakes 1 tsp
Cumin powder 1/2 tsp
Coriander powder 1/2 tsp
Salt 1 tsp / to taste

Potato Filling Preparation:
Boiled potatoes 3-4
Prepared masala
Green chilies (chopped) 1 tbsp
Coriander leaves (chopped) 1 ½ tbsp.
Coriander (crushed) 1 tsp

Ingredients for Assembling:
Wonton sheets as required
Prepared potato filling as required
Flour mixture (flour + water) as required
Oil (for frying) as required

Ingredients for Meethi Chutney:
Water 2 cups
Tamarind pulp 1/2 cup
Sugar 1/2 cup
Salt 1/2 tsp
Red chili flakes 1/2 tsp
Cumin powder 1/2 tsp
Orange food color 1/4 tsp
Slurry (cornstarch + water) 2 tsp + 2 tbsp

Directions for Masala Preparation:
1. In a pan heat oil and saute onion for 3-4 minutes on medium low flame until soft and translucent.
2. Add cumin seeds, turmeric, chili powder, chili flakes, cumin powder, coriander powder, salt and cook for 2-3 minutes on low heat. Take off flame and set aside.
Directions for Potato Filling Preparation:
3. In a bowl add potatoes and mash them well. Add prepared masala, green chilies, coriander leaves, crushed coriander and mix well. Set aside.
Directions for Assembling:
4. Take a wonton sheet, fill in the potato filling and make the wonton shape using flour mixture.
5. Deep fry them until golden brown and crispy.
6. Take off flame and set aside.
Directions for Meethi Chutney Preparation:
7. In a pan, heat water and tamarind pulp. Bring it to boil.
8. Add sugar and cook until sugar has fully dissolved.
9. Add salt, red chili flakes and cook for 5-6 minutes on low flame.
10. Add cumin and food color. Mix and cook for a minute.
11. Add slurry while stirring continuously until thickened. Let it cool at room temperature.
12. Serve hot and crispy wonton samosas with meethi chutney.
