NO YEAST TURKISH POGACA (Poe-ah-cha) RECIPE - Stuffed Rolls

In this episode I'd like to share with you my homemade 'POGACA' recipe, is a type of bread often stuffed with fillings like cheese, mashed potato, black olive or whatever your heart desires :) It is even possible to bake with no filling and you can make pogaca as large or small as you wish. Pogaca is very easy to make and it turns out so delicious every time. It is ideal for breakfast or as a tea-time snack, also an healthy homemade snack for a road trip.

INGREDIENTS
3 cups flour
2 eggs
1/4 cup vegetable oil
1 tbsp butter (at room temp)
1 boiled potato (in salty water)
1 cup lor cheese (or ricotta)
1/2 cup plain yogurt
2 tbsp milk (or water)
1/2 tsp granulated sugar
1 tsp baking powder
1 cup fresh parsley and dill
1/2 tsp dried mint flakes
1/2 tsp red sweet paprika
Olive oil
Black sesame or sesame seeds
Salt&blackpepper

DIRECTIONS

Sift 3 cups flour, baking powder and 1 tsp salt in a bowl, then mix and set aside.
In another bowl crack 1 egg and 1 egg white, reserving the yolk.
Beat the reserved yolk with 2 tbsp milk in a bowl, set aside.
Combine a pinch of sugar, 1/4 cup oil, 1/2 cup yogurt, 1 tbsp butter with the eggs and beat well until smooth.
Add flour mixture in two batches and gently knead just until combined.
Cover and refrigerate the dough for at least 30 minutes.
For the filling: chop the veggies.
Peel and grate the potato.
Add the lor cheese.
Add 2 tbsp egg wash and drizzle olive oil over the top.
Add a pinch of salt, 1/2 tsp dried mint flakes, sweet red paprika and black pepper to taste.
Mix well and taste for the seasoning and add more salt if needed.
When ready to bake, line a baking sheet with parchment paper and preheat oven to 200 C (392 F)
Divide the dough into 16 equal pieces.
Work with one piece at a time and cover the remaining pieces so they don't dry out.
Flatten one of the pieces of dough, using your thumb and flat fingers.
Place 1 real tablespoonful of filling in the center and fold over to make a half moon shape.
Then pinch edges together and shape into a ball, pulling edges under to make a smooth top.
If there are holes, you can make some repairs by pinching it together.
Place each piece, sealed side down and repeat with the remaining pieces.
Brush unbaked rolls with egg wash and sprinkle with black sesame, poppy or sesame seeds.
Bake for 17-18 minutes or until golden brown.
Let cool completely on a wire rack before eating.
