Za'atar Chicken Chicken Recipe Sanjeev Kapoor Khazana

As simple as it can be. Flavourful chicken marinated with, Zaatar spice and then grilled and served as slices with mixed olives, grilled garlic and sour cream.

ZA'ATAR CHICKEN

Ingredients

1 tbsps zaatar spice mix
400 grams chicken leg boneless with skin
Salt to taste
Crushed black peppercorns to taste
1 tbsp finely chopped garlic
2 tsps lemon juice
2 tbsps finely chopped fresh parsley leaves
2 tbsp finely chopped fresh oregano leaves
1 whole garlic bulb, cut into half
2-3 tbsps olive oil
Mixed pitted olives to serve
Sour cream to serve

Method

1. Take chicken pieces in a large bowl, add salt, crushed black peppercorns, garlic, lemon juice, zaatar spice mix and rub the spice mix well on each piece of the chicken. Set aside to marinate for 20 minutes. Add parsley, oregano and mix till well combined.
2. Heat olive oil in a non-stick grill pan, place garlic halves along with the chicken pieces with the skin side facing down. Grill on high heat for 4-5 minutes, flip and grill the other side for 3-4 minutes. Reduce the heat to medium, continue to cook till the chicken is cooked completely. Take the chicken off the heat, place it on a worktop. Allow to rest for 1-2 minutes.
3. Slice the grilled chicken into slices and arrange on a serving plate. Serve with mixed olives, grilled garlic and sour cream.
