Zatar Bread | Sanjeev Kapoor Khazana

Freshly baked bread with a generous spread of spicy zatar mix on it. It is ideal mezze. Watch this video to find out how to make this recipe.

ZATAR BREAD - (Serves - 4)

Ingredients

1 tablespoon zatar spice
2 cups refined flour + for dusting
1 teaspoon fresh yeast
A pinch castor sugar
½ teaspoon salt
2 tablespoons olive oil

Method

1. Take yeast in a bowl. Add castor sugar and 2 tablespoons warm water, mix and set aside to activate.
2. Combine flour and salt in another bowl and mix. Make a well in the centre, add activated yeast and mix.
3. Add some water and knead into a dough. Add 1 tablespoon olive oil and knead into a soft dough. Cover with damp muslin cloth and set aside to prove for 20-25 minutes.
4. Preheat oven to 180° C.
5. Transfer the dough on the worktop and knock back to release excess air. Divide into equal portions and shape them into balls.
6. Dust the worktop with some flour, roll out each portion into ½ cm thick discs and place on a baking tray. Put the baking tray in preheated oven and bake for 5 minutes.
7. Take zatar spice in another bowl. Add remaining olive oil and mix well.
8. Remove tray from oven, apply some zatar spice mixture on top, put the tray back into preheated oven and bake for another 5 minutes.
9. Serve hot.
