ZOPF LOAF

Ingredients

2 tablespoons butter + for greasing and brushing
1 cup refined flour + for dusting
1 cup multigrain flour
1 tablespoon fresh yeast
A pinch + 1 tablespoon castor sugar
1 teaspoon salt
1 egg

Method

1. Preheat oven at 180ÂșC. Grease a baking tray with some butter and dust some refined flour.
2. Dissolve yeast alongwith a pinch castor sugar and some water in a bowl. Heat in a microwave for 10 seconds. Remove from heat, whisk and set aside to activate.
3. Sieve together refined flour and multigrain flour in a bowl and mix. Add salt, 1 tablespoon castor sugar and mix well. Make a cavity in the center, add activated yeast and mix well. Add some water and knead into a soft dough.
4. Dust the worktop with some refined flour, place the dough and stretch well. Add butter and knead again till well incorporated.
5. Dust the worktop with some refined flour, divide the dough into halves and shape them into a long thin loaf.
6. Place one loaf horizontally on the worktop and another loaf vertically on it. Fold the edges on the opposite side overlapping each other, repeat till fully used and seal.
7. Place the loaf on the greased baking tray, cover with damp muslin cloth and prove for 20-25 minutes.
8. Break egg in a bowl, whisk and brush it on top of proven loaf. Place the baking tray in preheated oven and bake for 15-20 minutes.Remove from oven and brush some butter on top.
9. Serve.

Preparation Time:30-35 minutes
Cooking Time: 15-20 minutes
