Zucchini Muffins (Bread) Recipe

Soft and spiced muffin with flecks of zucchini.

Ingredients:
4 room temperature eggs
2 c sugar
1 c canola/veggie oil
1 ts pure vanilla
2 c shredded zucchini
2 c unbleached flour
2 ts baking soda
1 ts baking powder
2 ts cinnamon
1 ts nutmeg
1 1/2 ts salt

*The clip where I added in the zucchini got deleted :(
