ZUCCHINI PINE NUT DIP - (Serves - 4)Ingredients1 medium green zucchini, cut into small pieces½ cup pine nuts1 tablespoon olive oil1 tablespoon chopped garlic1 medium onion, finely choppedSalt to tasteCrushed black peppercorns to tasteMethod1. Heat olive oil in a non-stick pan. Add garlic and sauté for 30 seconds. Add onion and sauté till translucent. 2. Add zucchini, mix and cook for 2 minutes. Add pine nuts, salt and crushed peppercorns, mix and cook for 1-2 minutes. Remove from heat and cool.3. Grind the cooked zucchini mixture alongwith some water to make a smooth mixture. 4.
