Zucchini Pine Nut Dip | Sanjeev Kapoor Khazana

A flavourful healthy dip made with zucchini, pinenuts, onions and garlic. Watch this video to find out how to make this recipe.

ZUCCHINI PINE NUT DIP - (Serves - 4)

Ingredients

1 medium green zucchini, cut into small pieces
½ cup pine nuts
1 tablespoon olive oil
1 tablespoon chopped garlic
1 medium onion, finely chopped
Salt to taste
Crushed black peppercorns to taste

Method

1. Heat olive oil in a non-stick pan. Add garlic and sauté for 30 seconds. Add onion and sauté till translucent.
2. Add zucchini, mix and cook for 2 minutes. Add pine nuts, salt and crushed peppercorns, mix and cook for 1-2 minutes. Remove from heat and cool.
3. Grind the cooked zucchini mixture alongwith some water to make a smooth mixture.
4. Transfer in a bowl, sprinkle some crushed peppercorns on top and serve.
