A traditional healthy recipe just made healthier and tastier!ZUNKA MULTIGRAIN BHAKARIIngredientsZunka¾ cup Tata Sampann Fine Besan2 tbsps oil½ tsp mustard seedsA pinch of asafoetida (hing)1 medium onion, finely chopped3-4 spring onions, chopped with the greens¼ tsp turmeric powderSalt to taste2-3 green chillies, chopped2 tbsps chopped fresh coriander leavesBhakri½ cup sorghum (jowar) flour + for dusting½ cup pearl millet (bajra) flour + for dusting½ cup finger millet (nachni) flour + for dustingSalt to tasteTo serveOnion wedges as requiredGreen chillies as requiredMethod1. Heat oil in a non-stick pan, add mustard seeds and let them splutter. Add onion and spring onion whites and sauté for 1-2 minutes.2. Add turmeric powder, and mix and sauté for 1 minute. Add a pinch of salt, mix and cook for a minute.3. Add Tata Sampann Fine Besan little by little, mixing in between every addition and sauté for 1-2 minutes. 4. Sprinkle ¼ cup water, green chillies and adjust salt, add spring onion greens and coriander leaves, mix, cover and cook on low heat for 20 minutes. Mixing in between every 5 minutes. 5. To make the bhakri, sift together sorghum flour, pearl millet flour and amaranth flour in a large bowl. Repeat the process one more time and measure 1½ cups of the flour mixture and set aside. 6. Heat 1½ cups water in a non-stick deep pan, add salt, cover and let the water come to a boil. Switch the heat off and add the flour mixture, continue mixing till dough is formed.7. Transfer the dough in to a parat, knead the dough with the back of a small bowl then continue to knead with your hands while the dough is still warm.8. Divide the dough into equal portions, shape each portion into a ball, cover with a damp muslin cloth.9. Heat a non-stick tawa.10. Dust the worktop with the prepared flour mixture, place a dough ball, dust with flour mixture on top and roll into a disc.11. Place the disc on the hot tawa, cook on medium heat for 1-2 minutes on each side. Using a tong, cook the disc on direct heat for a few seconds and transfer them on a serving plate. 12.
