Rasgulla or Rosogolla- however, you call it, here is a 100% Foolproof recipe for preparing soft, spongy, and delicious Bengali Rasgulla. Happy Dussehra/Dasara!

Ingredients
* 1-liter whole cow’s milk
* 2 tbsp vinegar
* 4 tbsp water
* 1 cup sugar
* 5 cups water
* 4-5 crushed cardamom
* 1 tbsp kewada water

Method of Preparation
- Take 1-liter whole cow’s milk in a pan and stir it while it’s boiling.
- Now to split the milk take a mix of 2 tbsp vinegar and 4 tbsp water.
- Now gradually add this to the boiling milk.
- Now strain the split milk in a strainer and a muslin cloth.
- Wash the chhena with water to remove the residual of vinegar.
- Now squeeze the cloth and drain excess water and keep it tied for 45-60 mins.
- Now for the chashni take 1 cup sugar and 5 cups water and add the crushed cardamom in the pan and close the lid to let the sugar dissolve.
- In the meantime to prepare the chhena start kneading with the palm of your hand to remove all the lumps.
- Now divide this into 2 parts and then divide into equal 5 parts and roll it in the rosogulla shape.
- Now add the rosogullas in the boiling chaashni and these rosogullas should simmer in the chaashni and cover the lid for 5 mins on a low flame.
- Now open the lid and cook it for 7 mins.
- Now add the kewada water to this and garnish it.
