It's important to know how long your fish will last when you're making sushi at home. This week's question for 3 Minutes of Sushi: What is the shelf life of fish? In short, I wouldn't personally eat any fish that has been thawed our for more than 5 days.Most sushi chefs agree that the peak flavor of the fish is achieved between 2-4 days after it is thawed. This is because the enzymes in the fish's muscles have had enough time to break down the proteins into delicious amino acids. This makes the fish very tender and flavorful!But there is a fine line between just right and too far gone.
