Makisu Comparison - Bamboo Vs. Plastic | Secrets of Sushi

In this video I compare the differences between a bamboo VS. a plastic makisu!

For over a decade, I have been using bamboo rolling mats (makisu) when rolling sushi. Secrets of Sushi prioritizes sustainability and I can't ignore the use of cellophane (plastic wrap, Saran Wrap, etc.) to wrap the makisu. While it's convenient and relatively easy to do, in a professional setting it is extremely wasteful.

Most sushi restaurants will use an average of 3 feet of cellophane per makisu and usually have 3 - 6 mats wrapped throughout a day. That's anywhere from 9 - 18 feet of cellophane used per day and then thrown away! That's a lot of single-use plastic that will end up in our oceans at some point...

Thankfully, there are more earth friendly options to take advantage of now.

Plastic rolling mats are beginning to improve in quality. While these new plastic mats are not perfect replacements for the original bamboo makisu (not yet at least), they certainly cut down the single-use plastic!
