AKOORIIngredients6 eggs¼ cup milkSalt to taste1 tablespoon ghee1 teaspoon cumin seeds1 inch ginger, chopped2 medium onions, chopped1-2 green chillies, chopped1 large tomato, chopped¼ teaspoon turmeric powder½ teaspoon red chilli powder2 tablespoons chopped fresh coriander leaves Method1. Break eggs in a bowl and whisk well. Add milk and whisk again. Add salt and whisk.2. Heat ghee in a non-stick pan. Add cumin seeds and let them change colour. Add ginger and onions, mix and sauté till onions turn brown.3. Add green chillies and tomato, mix and sauté on high heat for a minute. Add turmeric powder and chilli powder, mix well and sauté till the ghee separates.4. Reduce heat, add whisked eggs and cook, stirring continuously, till the eggs are fully done but not dry. 5. Add coriander leaves and mix.6. Serve hot with pav.
