AKOORI

Ingredients

6 eggs
¼ cup milk
Salt to taste
1 tablespoon ghee
1 teaspoon cumin seeds
1 inch ginger, chopped
2 medium onions, chopped
1-2 green chillies, chopped
1 large tomato, chopped
¼ teaspoon turmeric powder
½ teaspoon red chilli powder
2 tablespoons chopped fresh coriander leaves

Method

1. Break eggs in a bowl and whisk well. Add milk and whisk again. Add salt and whisk.
2. Heat ghee in a non-stick pan. Add cumin seeds and let them change colour. Add ginger and onions, mix and sauté till onions turn brown.
3. Add green chillies and tomato, mix and sauté on high heat for a minute. Add turmeric powder and chilli powder, mix well and sauté till the ghee separates.
4. Reduce heat, add whisked eggs and cook, stirring continuously, till the eggs are fully done but not dry.
5. Add coriander leaves and mix.
6. Serve hot with pav.
